PERUVIAN FOOD: The best of Ceviche

If you have not tried ceviche and many acquaintances insist that you have missed a delicacy for the palate, let me tell you that they are right. This culinary delight is part of the menu of different Latin American countries, and corresponds to a preparation of marinated meat (seafood or fish) in various citrus dressings, usually lemon. The origin of this delicacy is attributed to its marine origin, which is why many connoisseurs of the subject place its birth on the South American coasts, specifically in Peru.

However, this dish has been adapted to different cultures and ingredients and has come to integrate meats such as chicken or varieties of vegetables.

Peru is a megadiverse country, not only because of its geographical, climatic and cultural variety, but also because of the food products that are produced in its territory. And our sea does not escape this rule, it is one of the richest on the planet, it contains more than a thousand species of fish, crustaceans and mollusks🍤🐟🦀🦐🐙. This marine diversity in conjunction with the great variety of local products, have resulted in a great variety of Peruvian ceviches🥗. These types of ceviches are prepared with fish, seafood, meat and even some vegetables.

All this combination of products and flavors probably places Peru as the country with the most variety of ceviches in the world🌎. Here is a short list of the richest and most popular types of ceviches in Peruvian cuisine:

Fish ceviche: classic or traditional!

It is made with white fish of firm consistency and with a texture that can be kept hard, so that, with the citrus, the cubes are cooked on the outside but remain soft on the inside. They can be made with: corvina, sole, pejerrey, mackerel ... Bonito is the best option, so now you know!

Shrimp ceviche!

It is the most common on the coast, it is prepared with boiled shrimp, lemon juice, orange juice, tomato, coriander, pepper, onion minced in a feather in abundant quantities. Its marinade and accompaniment vary regionally; using toasted corn, patacones, chifles; too rich !!

Mixed ceviche!

Various seafood or fish are added to the common ceviche, that is, ceviche with cooked seafood (mussel, octopus and squid) and accompanied with yucca. good option for seafood lovers!

Octopus ceviche!

Instead of white fish, it is prepared with tender octopus or boiled water to soften it. this option is one of my favorites!

Chicken Ceviche!

If you like to try original recipes, we encourage you to try the chicken ceviche, a good option to vary the menu of the week. It is excellent for those who do not like fish or seafood.

Mushroom ceviche!

This is an excellent option for vegetarians and / or vegans since it is made from pure vegetables. nobody should be left without trying a delicious ceviche !!

My eating habits

What's up!😄 I am maricielo and as you can see in the photos that I shared here, my husband and I are chubby with love💏💖😂. The truth is that work and routine have not allowed us to carry eat as we would like, but I am not complaining because they are not bad💪💁.

For breakfast it is customary to have papaya juice with toast and some scrambled eggs.
For lunch, we usually have noodles, the red ones are my favorites !! and we love strawberry jelly for dessert😋.
For dinner, we usually have to order delivery🙊. Sometimes it's grilled chicken or burger with potatoes. I know it's not ideal but at night I always end up hungry for work !!
